Black Bean Salsa

Quick and easy to make and healthy too!

Ingredients

  • 2 cans black beans (drained and rinsed)
  • 1 can whole kernel corn
  • 2 tomatoes, chopped
  • 2 tablespoons lime juice
  • 1/4 to 1/2 cups cilantro
  • 4 tbsp olive oil
  • 6 tbsp white vinegar
  • 1 teaspoon salt
  • 1 teaspoon pepper

Instructions

  1. Mix all ingredients in a large bowl. Chill. Serve with tortilla chips or add to your favorite taco recipe.
