I developed this recipe with my friends at Cool Springs Wine & Spirits. They are a great source for liqueurs and wines for cooking and baking. I hope you enjoy this recipe as much as my friend and family enjoy it.
1 package chocolate cake mix
1 (5.9 oz) package instant Godiva™ dark chocolate pudding mix
1/3 cup olive oil
3 large eggs
Heat oven to 350 degrees. Insert cupcake liners into your cupcake baking pan. Set aside.
Mix cake mix and all ingredients in large mixing bowl for about 2 minutes on high. Fill cupcake liners only halfway (this avoids them spilling over the sides as they are baking).
Bake for about 18-20 minutes or until toothpick inserted into center of pan comes out clean.
Cool in the cupcake pan. Frost cooled cupcakes with Godiva™ Chocolate Martini Buttercream.
Godiva™ Chocolate Martini Buttercream
1 small bag of powdered sugar
1 stick softened butter
3/4 cup cocoa (omit for the orange frosted cupcakes)
pinch of salt
2 tbsp Bailey’s™ Irish Cream
In large mixing bowl add butter and mix on high for about 1 minute. Add the rest of the ingredients. Mix until fluffy. Frost cupcakes.
For orange cupcakes use Godiva™ White Chocolate liquor and add 3-5 drops or orange food coloring to the mixture.
