Mike’s Marvelous Muffins

  submitted by Mike Briggs 4 1/2 cups Quaker Oat Bran Cereal 2 tsp. baking powder 1/2 cup brown sugar 1/2 cup walnuts, chopped 2 1/2 cups skim milk 4 bananas, very ripe 4 egg whites 4 tsp. olive oil 4 tsp. honey   Pre-heat oven to 425 degrees. Mix dry ingredients in a large bowl. Mix milk, bananas, egg whites, oil and honey in a blender. After blending, add nuts and blend a little more. Add to dry ingredients and mix. Line muffin pan with paper baking cups and fill them with the batter. Bake for 17 minutes.
