Mix graham crackers, sugar and melted butter together. Press down into 8 x 12 inch baking pan. Chill.
Beat egg yolks till thick. Add milk, lemon rind, and juice gradually stirring until thick. Stir 1 cup coconut. Whip egg whites until foamy. Gradually add 4 tablespoons sugar. Beat until stiff. Fold into lemon mixture. Pour over graham cracker crust. Sprinkle with remaining coconut. Chill in freezer about 6 hours. Top with whipping cream.
