Peanut Brittle

Mom used to make this every Christmas for our friends and family. I wanted to share her recipe with you. Peanut Brittle by Mrs. Betty Fisk

peanut brittle2 cups sugar

1 cup light corn syrup

½ cup water

2 cups roasted peanuts

2 tsp. baking soda

1 tsp. butter

1 tsp. vanilla

candy thermometer

In very large pot cook sugar, syrup and water to 280 degrees on candy thermometer (medium crack stage). Do not stir, except to mix. Add nuts and let cook in syrup mixtures about 3 minutes or until they turn golden brown. Add baking soda and remove from heat. Mixture will foam. Add butter and vanilla. Pour into buttered jelly roll pan or 2 nine inch square pans, as soon as foaming subsides. Break up candy when completely cooled. Makes about 2 lbs. of candy.
