This Kolacky Recipe by Mrs. Walter Benz my Grandmother. She used to make it every Christmas for our family. My sister has continued her tradition. They are fun baking activity to do with children too. Loved helping with the filling and folding them together before baking. I hope you enjoy making them as much as our family.
¾ lb. butter softened
3 cups flour
8 oz. Philadelphia cream cheese
1 can apricot or prune filling
Powdered Sugar for dusting cookies
Mix ingredients together and place in refrigerator overnight. Use flour on board and roll out dough to about 1/8 inches tall. Cut into 2 inch squares pieces using a pizza wheel cutter. Spoon 2 teaspoons of filling into the center of each square. Don’t over fill. Pinch dough together in the center. A bit of filling will be visible at each end.
Transfer cookies to ungreased baking sheet. Bake at 375 degrees for 10 minutes.
