Potato Corn Chowder

4 medium potatoes, cut into small pieces

3 cups of chicken broth

1 onion, chopped

small package of frozen corn

3/4 cup of milk or cream

2 tablespoons of corn starch

2 tablespoons butter

salt and pepper to taste

2 pieces cooked bacon (for garnish)

1 cup of shredded sharp cheddar cheese (for garnish)

In large pot cook bacon until brown. Add onion and cook stirring until onion is almost browned. Add salt, and pepper and cook for 1 minut. Stir in chicken broth. Add potatoes and corn. Stir and simmer on medium heat. Cover and cook for about 15-20 minutes until potatoes are tender. Reduce to low heat.

Combine milk and corn starch and whisk into the soup mixture, a small amount at a time, until slightly thickened.

Pour into bowl. Garnish with cooked bacon and cheddar cheese.
