Quick Chocolate Buttermilk Cake

1 3/4 cups sifted cake flour

1 1/2 cups sugar

1 tsp. baking soda

1 tsp. salt

1/2 cup cocoa

1/2 cup soften butter or shortening

1 cup buttermilk

2 eggs

Sift together flour, sugar, baking soda, salt and cocoa. Add butter (or shortening) and 2/3 cup of buttermilk (or sour cream or yogurt). Beat well about 2 minutes with mixer. Add 1/3 cup more buttermilk and the eggs. Beat 2 more minutes. Bake in 2 greased, waxed paper lined 8 inch pans at 350 for about 30 minutes. Fill and frost with chocolate buttercream icing.

Chocolate buttercream icing

1 box powdered sugar

1/2 cup cocoa

1 still softened butter

1 tsp. vanilla

1 tsp milk

pinch of salt

Mix all ingredients in mixing bowl with mixer for about 2 minutes or until smooth.

Frost cake after it’s cooled.
