Bailey’s Irish Cream ™ Cake

This amazing recipe was developed with the help of our friends at Cool Springs Wine & Spirits in Franklin. They are a wonderful source for liqueur and wine.

1 package vanilla cake mix

1 (5.9 oz) package instant vanilla pudding

1/3 cup olive oil

3 large eggs

1 cup Bailey’s Irish Cream

Heat oven to 350 degrees. Grease and flour 2 round cake pans.

Mix cake mix with all ingredients in large mixing bowl for about 2 minutes. Pour into¬† cake pans. Bake about 35-45 minutes testing at 35 minutes.¬† Let cake cook in pans. After cool to the touch invert the 1st layer onto your cake plate. Place icing on it. Place the 2nd layer on top of it. Finish frosting until completely covered. Add some festive St. Patrick’s Day sprinkle edible decorations. Enjoy.
