Creamy Black Bean Salsa

1 (15 oz) can of black beans rinsed & drained

1-1/2 c. frozen corn, thawed

1 cup sweet red pepper, finely chopped

3/4 cup green pepper, finely chopped

1/2 cup red onion finely chopped

1 t. fresh parsley, minced

1/2 cup sour cream

1/4 cup mayonnaise

2 tsp. red wine vinegar

1 tsp. ground cumin

1 tsp. chili powder

1/2 tsp salt

1/4 tsp. garlic powder

1/2 tsp. pepper

tortilla chips

 

In a large bowl, combine beans, corn, peppers, onion, and parsley. In another bowl combine sour cream, mayonnaise, vinegar and seasonings. Pour over corn mixture and toss to coat.

Prep time: 20 minutes. Makes 4 cups of salsa
