2 cups chicken breast, diced
1 onion, chopped
1 bell pepper, chopped
2 cans chicken broth
1 can shoepeg corn
1 jar salsa
1 tsp cumin
1-2 tsp. chili powder
1 tsp. cilantro or 2-3 tsp. fresh cilantro, chopped
Saute chicken, add onions, and peppers. Cook until tender and add remaining ingredients. Simmer for 10 minutes adjust seasoning if necessary. Serve with avocado, sour cream, and lime chips.
