1 3/4 cup of sugar
1 heaping cup softsilk cake flour
2 cups egg whites, room temperature
1 tsp. salt
1 3/4 tsp. cream of tartar
2 tsp. vanilla
1 tsp. almond extract
Preheat oven to 375 degrees. Sift sugar and cake flour together 6 times.
Beat egg whites, salt and cream of tartar stirring on edge as beating.
Beat stiff but not dry. Fold in flour ingredients 8t at a time with folding spatula.
Add vanilla, almond extract. Add the very end 4 tsp. cold water.
Pour into ungreased tube pan. Bake on middle rack.
Bake for 35 minutes and watch to make sure it does not overbake.
